Everyone loves avocado, at least in my world. There were years between college where I had an avocado intolerance. The heavy fats were hard to digest on my stomach. It felt as if a rock was sitting in my stomach everytime I indulged in avocado.
A few years past where I was skipping out on table guac. Then I decided this is not the outcome I’m accepting. I decided I will enjoy avocado again, because it is a great source of healthy fats. So, with some exposure therapy I was able to reintroduce avocado in low doses back into my diet. Yay for exposure therapy…
And so the table guac recipe creation went down.
What you’ll need (serves 1-2)
1 Avocado (preferably organic)
1/2 lemon
1 tsp salt
1/4 cup chopped tomato
1/4 cup chopped onion
1/4 cup bunched cilantro
In a large bowl, mash your avocado. Once mashed, add your lemon juice and salt. Mix and mash. At this point you can add your tomato and onion. Mix and top with cilantro. It really do be that simple. Optional homemade pickled onion side for pre/probiotic benefits. But, we’ll save that recipe for another day.
