When I tell you I hit peak nostalgia this weekend, it was sippin’ on the refreshing homemade ginger ale that I wiped up. Not many people will have fresh knobs of ginger lying around, but I usually do. They come in handy and are price friendly at Trader Joes, right next to the garlic cloves. This surprisingly did not take that long, aside from boiling the ginger water. And it was 10/10 worth the concoction. It was fun and fulfilling. And YES, it does taste like a can of Canada Dry, just without the 22G of added sugar and caramel color nasties.
What you’ll need:
1 1/2 cups Fresh Ginger Knobs
1 lemon
4 tbsp organic maple syrup
1 lime
Sparkling water
1. Cut your ginger into thin slices. It does not need to be perfect. The skin also does not need to be shredded off. Add the chopped ginger to a pot. Add 1 1/2 cups water. Bring pot to a boil, then simmer for 30 minutes.
2. While water is simmering, squeeze the juice of 1 lemon into a glass. Add 4 tbsp of your maple syrup and mix.
3. Strain your ginger from water. Add this water into the lemon/maple syrup mix. Let it cool.
4. Add a cup with ice, pour over your mixture, top with sparkling water. Add a slice of lime if you’re feeling fancy.
It really is that simple. I had made about 4-5 cups of Ginger Ale with 1 1/2 cups fresh ginger. You can store in the fridge for about a week.
