If you haven’t already grasped the theme on my recipes, it is the simpler the better. I was very impressed with the 4 ingredient blender pancakes. Between prep and cooking I had a stack of cakes in 15 minutes. The recipe below made about a serving size of 3 pancakes.
What you’ll need:
2 eggs
4 tbsp protein powder of choice
1 banana (ideally ripe)
a few dashes of cinnamon
coconut oil
Optional toppings:
banana slices
strawberries
maple syrup
walnuts
1. In a blender add your eggs, protein powder, bananas, and cinnamon. Adjust the protein powder for a drippy but not runny consistency.
2. Heat up your non-stick pan on low/med heat. Add your coconut spray to pan.
3. Pour out some mixture from the blender. Let the cake sit on each side for 2-3 minutes (cooking times vary based on heat).
4. Remove from heat and continue until you are out of pancake mix.
5. Top with your favorite toppings <3
In this recipe, I used hemp protein powder. That’s why my cakes are dark in color. Because the protein powder is green. They are flourless & naturally gluten free <3
