There’s nothing more appealing to me than an easy DIY dinner where you can mix a ton of random ingredients from your fridge and pantry together to create a masterpiece. This is a random assortment of vegetables but the basis of the dish being sautéed garlic and ginger is the real star of the show. The rest of the characters can be mixed and matched.
Ingredients –
3 garlic gloves, minced
1 knob of ginger, minced
2 tbsp olive oil
1/4 cup onion, chopped
1 container broth of choice (I used Kettle and Fire bone broth)
frozen pork dumplings
3 carrots chopped thinly
3 celery sticks chopped thinly
1 can of white beans
Instructions –
1. Cook dumplings according to package. Chop veggies while they cook.
2. Add 2 tbsp oil to a pan.
3. Add chopped onion and sauté until translucent.
4. Add garlic + ginger, sauté about 3 minutes.
5. Add container of broth, carrots, and celery.
6. Let the mixture boil, then decrease to simmer, for 15 minutes.
7. Prior to serving, add can of beans & cooked dumplings.
Again the versatility here is the key. Add spicy chili oil. Add spring onion. Add whatever your heart and cabinets desire.
