Breakfast Protein Bowl

I am a lover of breakfast foods. This calls for a bit of preparation but is a really good option if you have left over chopped vegetables that you are unsure how to bring back to life. You could poach the eggs but my lazy girl way is to drop them shell on into boiling water for a soft boiled method. Explanation below –

What you’ll need:

2 eggs
1 chicken sausage
chopped onions
chopped peppers
1/2-1 chopped sweet potato
1/2 avocado

1. Boil a pot of water. Once boiling drop eggs shell on. Take them out at 6-7 mins depending on how well you prefer your yolk cooked. Run them under cold water to stop cooking and set aside.

2. Chop your sweet potato, onion, and pepper. In a pan add some oil of choice (I swear by Graza) and add your sweet potato. Ensure you are mixing from side to side every few minutes to promote even cooking. You can even take a more hands off approach by roasting the sweet potato in a sheet pan. Same idea, toss with oil and pop in the oven for 15-20 minutes. Same preparation for your onion & pepper. I would recommend sautéing on the stove top here. Oil & salt are a vegetables best friend.

3. Cook your sausage by following the instructions on the label. I usually toss it in the same pan I’m frying up my vegetables.

4. Finally, prepare your guacamole topping. You can simply add slices of avocado on top for a great source of fat or you can follow my guacamole recipe here.

5. The fun assembly part – to a bowl add your cooked sweet potato, onions, peppers, chopped sausage, unshelled eggs, and avocado topping. I topped the bowl with spicy mayo.

This does require a bit of prep but is very hearty and filling. It’s a protein heavy meal to say the least.
