By now you know I am a brekkie girl, through and through. What time is it? Breakfast time. Today I am collaborating with Mr. Tortilla to showcase their 1 Net Carb Multigrain tortilla wraps. Below is my take on a breakfast taco, but do what you want with what you have. Enjoy <3
Ingredients:
2 eggs
4 tortilla wraps
1 sausage patty
1 cup potato, chopped
1/2 cup onion, chopped
1/2 cup peppers, chopped
1/2 avocado or guacamole spread
cilantro, chopped (optional)
buffalo sauce (optional)
1. Chop potatoes, onions, and peppers. Add to an oiled skillet and cook for 8-10 min until charred on all sides.
2. Add sausage to pan or to oven and cook according to package.
3. Scramble eggs in same pan as potatoes.
4. Assemble tacos with: avocado, onion, pepper, potato, scrambled egg, diced sausage.
5. Fold tacos and pan fry with oil on pan for 2-4 min per side.
6. Remove from heat and top with cilantro & sauce of choice.
