French Onion Pasta

What makes this French Onion you ask? Because I said so. But I do give tribute to the caramelized onions and beef stock synergistic combo. This effortless one pan dinner is a new go-to when I’m feeling a low appetite but know I need to fuel my body with something of substance. Use whatever pasta you enjoy. I am always reaching for a thick fettuccine noodle.

Ingredients:

1/2 white onion, sliced thin
1/2 cup sun dried tomatoes
1/2 cup beef stock OR milk of choice
1 tsp paprika
pasta of choice
1/2 cup reserved pasta water
parsley garnish, optional

Instructions:

1. Chop your onion thin and place in a shallow baking dish
2. Mix with oil or ghee + salt
3. Cook on 350F for 30-35 min
4. Cook pasta on side while onions cook
5. Remove dish from oven
6. Add paprika, tomatoes, stock or milk, sprinkle more salt, pasta water, and pasta, and parsley
7. Mix for a minute and watch your beautiful creation come to life
