My absolute go-to dinner when I have no inspiration is the Greek Salad. I love combining a ton of veggies together. They dance in the dressing and tang your taste buds to glory. Everything in this recipe is an eye-ball measurement.
Ingredients:
1 tomato, chopped
1 cucumber, chopped
1/4 red onion chopped
4-5 artichokes, chopped
6-8 green olives, chopped
1/2 block feta, crumbled
bunch of cilantro chopped
1/2 avocado, optional
Dressing Ingredients:
1/2 cup olive oil
2 tsp dijon dressing
1/2 lemon squeezed
1/2 tsp salt
1 tsp italian seasoning (thyme, basil, rosemary)
Mix all vegetables in a bowl and toss with dressing. Add protein for fun. I added leftover steak.
